Spring Means Strawberries!

Strawberries are probably my favorite fruit.  I will eat them until I have a bellyache.  I love them much like I love birthday cake.  That too I eat until I have a bellyache… I know I know I am a Titan of restraint…  My favorite strawberry recipe is balsamic strawberries.  It is fantastic and super easy to make.  I like to serve it with honey-drizzled ricotta or creme fraiche.  My brother likes his with vanilla bean ice cream.  No matter how you serve this recipe you can’t lose.

They key to good balsamic strawberries is the ratio; you’ve got to make sure to maintain the ratio of 2 to 3.  This means, 2 parts sugar to 3 parts balsamic vinegar.  You could be using teaspoons, cups or even gallons (depending on how many servings you are making) but as long as you keep the 2 to3 ratio you’re golden.

Heat 2 parts sugar with 3 parts balsamic vinegar in a sauce pan until it has the consistency of syrup.  Then toss the hulled and quartered strawberries in the syrup.  Super simple and super yummy!
